風土：Saint Aubin是近年酒迷之間口耳相傳的超值村莊，位於Puligny Montrachet與Chassagne Montrachet兩者之間背斜谷的山坡。富含石灰質的白色黏土，極適合夏多內葡萄的生長。常帶有白花、燧石、綠杏仁、橙花等優雅的香氣，酸度俐落，隨時間展現出蜂蠟、杏仁糖、肉桂等香氣。
葡萄經由人工挑選採收後，送至選果台做2次篩選，之後進入氣壓式榨汁機輕柔的壓榨，葡萄汁流至大槽中靜置約12~24小時做輕微的澄清，之後讓天然野生酵母進行酒精發酵，期間每週進行2~3次的攪桶增添香氣，圓潤感與複雜度。最後才依重力移置小橡木桶中培養，村莊級新桶比例約20~25%，進行為期16~20個月較長期的桶中培養
